I've used vnc2swf in the past.  It's now vnc2flv.  It worked
usually well, it's simple to use but all it does(or used to do?) is
record. No captions or editing after recording.

I've also used Qarbon's Viewletbuilder.  They have a commercial version
for Linux.  It's an alternative to Adobe's Robodemo/Captivate.
Viewletbuilder was really easy to use.  I could record what I was doing
on my desktop and add pop-up boxes/text/arrows to the video after. They
have a trial available but it's 299$.  This is probably the type of
application that you are looking for.
