fallback mode can be easily turned on/off (forced fallback) via  
"gnome-control-center".It's under "System Info" > "Graphics" > "forced fallback 
mode".

me desktops or how to perform a fallback.

I want to thank you Aaron, for presenting me with the exact path to 
fallback.  I selected it, and bumped up my workspaces to the usual 4.  I
 can now live with gnome 3.

I don't think I could have found it with my searching.
