I've been running "testing" on most of my machines for about
9 years now. It seemed to provide pretty much the right balance for me,
and I occasionally install a few packages from "unstable" when I need
them more urgently.
Securitywise, it seems to work well enough now that the security team
pays attention to testing (it used to be that it only cared about
"stable", so "testing" was kind of left in the dark while "stable" got
prompt updates from the security team, and "unstable" from the upstream).
