the MAC address easily enough without the encrypted SD card. Could they then

Not that I think it weakens the security of this much, but you can sniff
MAC addresses over wifi.
Why don't you just physically secure access to the system? Put it in a
metal box with a lock. This pretty much fixes all your issues, no?
Otherwise just secure the sD for less determined "attackers"
