There are many proponents of either minute-level scheduling or day-level 
scheduling.

I prefer day-level scheduling:

- research shows that sleep is important in memorisation
- with minute-level scheduling you can have the feeling that the scheduler 
sneaks up extra work behind your back during the day. You can never be sure 
that you're 'done' with all the scheduled cards for the day.

This being said, the architecture in 2.0 is flexible enough to support plugins 
with minute level schedulers. I probably won't be the one writing them in the 
near future though :-)

There are plugins that allow you to that even for 1.x :-)

I personally don't like to use them. After a while, you develop an intuitive 
feeling for the grades. Also, reading the intervals each time I find time 
consuming. People will also start second-guessing the algorithm, and you would 
need to explain the intricacies of the algorithm in order to help them 
understand.

Hope this explains my reasoning for the default settings. Still. everything is 
customisable with plugins should you so desire.
