The bug you're running into is #438 <https://github.com/couchbase/couchbase-lite-ios/issues/438>, which was fixed in version 1.0.3.1 (which came out a week or two after 1.0.3.)
I wonder whether the updated PhoneGap plugin was accidentally built with 1.0.3 instead of 1.0.3.1… unfortunately Pasin, who did the update last week, isn't in right now.
