There are many hundreds of soul instrumentals, of course, but a couple
of other honourable mentions spring to mind immediately:
Hank Jacobs - Elijah Rocking With Soul
Johnny Gibson Trio - Beachcomber
...and Earl van Dyke was responsible for one or two, "I Can't Help
Myself" being a favourite.

The Northern Soul scene was and still is very appreciative of
intrumental versions - as others have already said, frequently just the
same backing track with vocal missing.  IMHO it's a very rare example of
this kind of instrumental which can hold a candle to a vocal version -
how often is a song with even a half decent vocal better than one with
none at all (eg. the already mentioned "Agent Double O Soul" - the
instrumental is OK, but better than a version with Edwin Starr singing
on it?).
