Did you try running monit under upstart

http://mmonit.com/wiki/Monit/Upstart

I'm no ubuntu guru, so I'm not sure if that type of thing is available on
ubuntu or not. Basically, if anything kills monit, upstart will
automagically start monit for you.

You may want to check /var/log to see if someone is able to log in and kill
the process on you too.
