As far as pre-built packages of the latest stuff, it looks like 2.10 is available for CentOS:
http://ftp.novell.com/pub/mono/download-stable/RHEL_5/i386/ I have used Mono on CentOS since forever but I have built it from source all that time. The biggest hassle is getting the dependencies in place for 'libgdiplus' but at least they are all available with 'yum'.
