Ok, problem resolved! Seems that I needed the mono-addon-extras RPM package, which includes the "System.Runtime.Caching.dll"
Noticed some odd dependencies when installing the packages, such as why does "mono-addon-web" require "mono-addon-data-sqllite"? Anyway, its sorted now!
