If they dont update in iTunes, they keep the old version (I think itunes on the phone prevents a non-working version from being installed)
but if they do it via itunes, it will fail - they'll have the new one in itunes, but it'll not be able to install it. Not sure if it then kills the one on the phone tho! Everything else will run iOS4.3 or newer.
