You could actually use a (class) method instead of "my $TABLE".
Something like:

use Moose::Role;
requires '_table';

# call $self->_table somewhere
# ...
}
package FN::User;
use Moose;
with qw(FN::Utils FN::Contact);
sub _table { 'fnuser' }
