In this part of the country, people like their steak *REALLY* "chewy". I
(from New York) am used to filet mignon that you can cut with a fork. The
first time I had a steak here it was a "Kansas City strip" and it took me
around 10 minutes to chew my first bite enough to where I could swallow it!
