The other, less expensive option is to simply fabricate a fitting that
will allow you to attach the camera (via the tripod screw) to a lab stand.
I made one (10 mm bar, with a L-shaped plate welded to one end) for the
equivalent of 5€. The advantage of this is that it is very mobile and
you can take it to any lab (they all tend to have laboratory stands).
The lights are another question - I use a ring-flash with a macro lens.

Thank you all for your suggestions about how to go about collecting
data! What a wonderful resource this is!
I have another silly question. For those of you who take pictures, do
you use a tripod or some other device? I've been envisioning some
adjustable / fully movable rig that could take pictures from the same
angle each time. However, I really can't find something like this. I
figure that I will end up making something myself (with torches,
welders, and duct tape!!), but perhaps there is something out there already?

Dear Matt,
I think a copy stand is the piece of equipment you're looking for.
I'm still waiting for mine due to bureaucratic reasons but I think
it's a really useful device, especially if you have a copy stand with
lights so you don't have to set the lights every time you use it.
