Hello,
I am a Kindergarten teacher and a Literacy Coordinator for Grades 5 - 8.
I tell the teachers at the Middle school level that it is essential that the
vocabulary students should be expected to know should be connected to the
big idea of what you are teaching in science.  So if your big idea in
science is say, the physical properties of water for instance, then the
vocabulary would be words related water:
I.e.: weather, ice, snow, sleet, rain, frozen, fog, steam, solid, liquid
hot, cold, temperature, etc.
In fact I would begin by asking them what words they know that are related
to WATER first and maybe they can help to create their own vocabulary lists
to use when writing stories related to WATER. 
There are 5 big ideas in science, so whatever big idea you are teaching in
science, your vocabulary should connect and flow from there.
