Hi Lane Switching translation and language models is possible, and is documented under "advanced features" on the Moses website.
Changing the weights is trickier because of the varied caching and precomputation strategies in Moses. However this was added in the mira branch - not sure if it will make it into the trunk - and it could easily be connected to the server.
