Not exactly what I want to do but I'll give it a try.  Most e-mail
clients allow for different SMTP servers on a per user basis so I was
expecting that a different SMTP server could be specified with motion.

Mail clients are something of a special case, since sending  and
receiving mail is their primary purpose. Most programs that want to
send mail just use the facilities already configured in the OS rather
than reinvent the wheel for what's usually a subsidiary purpose.
