I tried a bit of your config and ran motion using 'systemd-run'.
The error in syslog was "can't open display" so systemd is not able
to use the graphical output to run gedit. It can write an echo message
to /tmp
though so either systemd needs to be told which display to use or you
should use
shell-based resources to do what you want (ed, sed, etc)
