Robin's analysis was excellent and we know about this unfortunate problem. The bug is really in the 4.7 code, which takes any tags it doesn't understand (e.g., tbody) and shoves them into the caption. Very silly thing to do, of course, but you know about 20/20 hindsite and all! We decided the only rational course was to abandon the 4.x Composer in cases like these and hope people upgrade quickly to 6.x. Making the new Composer much better at round-trip preservation is a major goal for the Composer team, but it is a very difficult problem, so we still have a lot to do to make that happen. But we are aware of how important this is.
