Yes, I thought of that too. But as far as I understood it, they use a virtual drive where they place temporary stuff. I don't know how to use this on windows.
Anyway I will take a deeper look at it.

You might also consider Morphix instead of Knoppix, because it's easier to customize and there exist already different versions.
But to me this is not an solution for my purpose of sending an CD with projects of mine when applying for a job, because it seems like a overkill to have the people reboot their system, start Knoppix/Morphix from CD just to have a running browser...
