The use of X server is what I wanted to avoid.
Right after that sentence it says "To run headless, it'll need an X server like Xnest or VNC. VNC's working well for me.". It's a trick you can use for all X apps to render off-screen. I'm not sure why he says Xnest; he probably means Xfvb.
