Plugin for mail?

Is there such a thing as a plugin for mail? What I would like to do is 
catch something like the RFC822 header "Content-Type" and act on it with 
a plugin if its application/mytype or something. Im looking to be able 
to modify the mail slightly and then pass it back. Is this possible?
