If you want to use different SMTP servers for different accounts, then
that is possible (Advanced button in Mail/News Preferences->Account
Settings). But if you want to do a per message smtp server selection
then I that isn't possible and I don't think there are any plans to
support that. File a bug if you really want that feature.
