I think, the notion of a "default SMTP server" does make sense. There 
are cases, where users check multiple accounts (of different providers) 
from the same session. E.g. most POP servers allow you to check mail 
from another ISP (because POP provides password protection), but most 
SMTP servers don't (because there is no login option in the spec, IIRC).

(Arcor and VIAG Interkom are competing German ISPs. Other IDs are made 
up.) It is a common scenario to check mail for <[EMAIL PROTECTED]> 
(at pop.viag-interkom.de) and <[EMAIL PROTECTED]> (at pop.arcor.de) while 
being dialed into Arcor and thus using smtp.arcor.de, even for replys to 
mail to <[EMAIL PROTECTED]>.

So, I think, we should keep the idea of a "default SMTP server", but we 
should

    * give the option to specify a different SMTP server in the Account
      Wizard
    * allow the default SMTP server to be changed per-session
    * offer the option for the default SMTP server to override the
      account-specific SMTP server
