The problem with your plan is that many ISP's will not allow you 
to use another domain's SMTP server.  And this is a growing 
trend, not a shrinking one.

The current set-up is more logical for the long haul as you have 
to physically change the settings, so you KNOW why the message 
keeps bouncing.  If the SMTP is set by account instead of logon, 
you'll have a mob of confused and angry users wondering why the 
hell they can't send mail.

And the server you need should really matter - you can set the 
"reply to" address to the account, regardless of the SMTP it's 
going through.
