on the command line go to your mozilla directory (i.e. probably using 
xconsole).
the mozilla directory is normaly /usr/local/mozilla but you can change 
it so go to where you put it.

Then type ./mozilla --help
note that the dot slash are important if you have not go the directory 
in your path.
you will see there the command line to access the profile manager which 
is -ProfileManager (making the command line: ./mozilla -ProfileManager)
then use the create button to create a new profile and then whenever you 
start mozilla from then on you get to choose which profile to use.

Unfortunately there is no way to switch profiles or open a new mail or 
browser window in a new profile. Which would be great.
