Having two defaults shouldn't be a problem; this seems to be a known issue.

If you're getting %s, it just means that there is no defined SMTP server for 
that account; go to Edit | Preferences | Mail & Newsgroups Account Settings 
| [account]; click on the 'Advanced' button and set your SMTP server there.
