I could at least probably tell you about helpers, although I haven't tried
this.
There is a defaults/profile directory under bin. These are the files that
get copied when a new profile is created.
Mimetypes are stored in a file calld mimetypes.rdf in your profile dir.
so you could try creating some mime types, then putting mimetypes.rdf in
defaults/profile and then creating a new profile and see if you get the mime
types.
If you don't, mozilla might be copying explicit files out of defaults, and
we might need to fix that.
