.security is for security issues, eg security holes in the product,
javascript's security model, what privileges remote code should have,
etc.

.crypto is for all issues related to NSS and PSM.

Cryptography, however, is not within this group's charter.

cryptographic issues surrounding the Mozilla source code. See our PKI
project for more info.

(I think the latter description may not have been updated since PSM and
NSS were integrated into the open-source project, but the right group is
still pretty clear).
