This forces us to write 1000's lines of code just to programmaticaly change prefs for a handler (like it's done in chrome://communicator/content/pref/overrideHandler.js).
well, even if nsIMIMEService handed out the same nsIMIMEInfo each time you ask it, that probably wouldn't help you, since the changed handler would not persist across a mozilla restart.
