It looks like you're running into the same problem that I am.  I
cannot believe that it's so complicated to simply update a file in a
.jar with a file stored in an XPI.

If you look at the increasing threads posted from me recently, you'll
see my chain of discovery on how to do this - although I'm still not
quite at the end.

I thought of just replacing the whole .jar myself - but the only
problem with that is that you'd end up with version inconsistencies. 
Your installer routine would only be definitely usable with the
version of Mozilla that the .jar you're using came from...
