My understanding is that find-k finds the wavector(s) components in a specific direction of the BZ with Gamma as the starting point for a specific band (hence useful for dispersion diagrams). How would it be possible to find the corresponding wavector(s) given any arbitrary starting point instead (within the first BZ)?
It doesn't use Gamma as the starting point. It uses the kmag-guess argument that you pass, which can be arbitrary.
