True. A REAL symbol of how Nordics don't automatically run from change. "Ingebretsens" (the true spelling) could've relocated to Mall of America or some other suburban location when Powderhorn started "coloring up", but they chose to hang onto their Lake Street location as a beacon to other white enterprises that there's still life on Lake. Makes me pretty proud as a Scandinavian who ALSO didn't bug out because non-Europeans started increasing in percentage. So now we have Ingebretsen's there rubbing shoulders with mercadoes and halal meat stores. Kinda cool, IMO. Oh, for those that don't know, this Saturday is a celebration of lutefisk.
