Ben, I'm not sure exactly which Cisco equipment you are using so this may or may not help. I've walked some of the voice MIBS on my Catalyst 6509 switches with 6608 blades, but haven't found a way to extract this particular information with SNMP.
We monitor Cisco voice calls using MRTG and Perfmon counters from the Call Managers. Windows Perfmon Counter \\callmanagername\Cisco MGCP Gateways(some name based on MAC)\PRIChannelsActive This is done using the information from Paul Simmonson's site.
