Richard, Some ways to smooth peaks are the "logscale" and "secondmean" options.

To achieve this changing the maxbytes value is the only way to go. If you know for sure the maxbytes value will never be reached it is an option to lower the MaxBytes value in your config file. Be aware that this will make the percentage figures below the graphs useless (in case you have the percentage displayed).
