Laurent, By default MRTG will compute the rate per second. Assuming you have the normal 5 minute interval between 2 polls the difference between the old and new value need to be over 300 to graph 1 per second. You can add 'Gauge' at the options line to graph the values as they are polled. The gauge option however causes graphs to grow steady over time. The perminute or perhour options are alternatives that compute the rate per minute or per hour.
