This would seem very odd to me: the standard 6-string guitar setup would give a totally unrealistic range for most of the instruments you quote, like flute or violin. If nothing else, it is always possible to add to a score a guitar instrument in tab format, write on it and then copy the notes to a flute or violin staff.
