Hi Kostis, I think you will find that many of the missing instruments you mention have been added to MuseScore 2, but if you find any that have been missed, let us have the necessary details to add them and that will be rectified.
Regarding the sounds - you must remember that the default sounds are all from the GM sound list which relates to the default soundfont, and you will find several discrepancies which cannot be overcome as the sounds are simply not there in the GM list.
