Yes I do now see more products. So I chose what I wanted, and now I will do a 
sync and see what happens.

go to administration, site configuation, sites, right click on your primary, 
choose configure site components, softwar eupdate point, and add some products, 
do you see them populated now ? after a successful sync at least....

have nothing in my All software updates (obviously cause I chose nothing) but 
where do I go to see if I can now select my products?

correct, just leave the products blank and then do a sync after the wizard is 
complete, the products normally download/update then

try synching the sup and then return to the products page
