The is a section in MDT help file called "*Deploying Applications Based on Earlier Application Versions" *followed that but also referenced Chris Nacker's blog: http://www.chrisnackers.com/2012/06/21/microsoft-deployment-toolkit-dynamic-applications-using-a-wildcard-for-mappings/ he has excellent info and videos on how to implement it, specially using wildcards.
