If your site boundaries lend themselves to it, you could use separate DPs for desktop vs. server builds, set different PXE boot passwords on each DP, and only add your OS image packages to each DP as appropriate.
They'd still be able to see each others' stuff on Task Sequence selection page but if they selected the wrong OS it would fail the package availability check before getting anywhere.
