You could maybe write a simple script that creates a pop up dialog at the beginning of the install. Create a program and make your Office install program run the other program first.
For notification when it is complete, prevent the Office install from doing the reboot by specifying the property SETUP_REBOOT=Never. Then configure the program so that After Running = ConfigMgr restarts the computer.
