That comes from the settings in security roles, off hand I don't know which 
specific setting it is, I created a highly restricted role to only modify 
collections properties for adding resources and it does not have the options 
for Endpoint Protection.  If you just want to hide it without changing role 
settings you can modify the console XML files to comment out that item in the 
context menu.  Check out 
http://ephingadmin.com/wp/cm2012-advanced-console-security-settings/ based on 
the info there I was able to hide many properties in the console menus for a 
group of users.
