If SCCM infrastructure is in place, I wouldn't go with the App-V 5.0 server infrastructure at all, I'd do the deployments with SCCM.

The time really depends on the applications, if the packager knows how they install and how they work, it shouldn't take too long per app (if the packager knows what he/she is doing). Packaking takes the same time that you'd install the full app + modifications. Then the package is delivered to SCCM and made in to the application model package there.

You should also consider about the App-V 5 client deployment, it's a little bit tricky if you're using Windows 7 on the client systems.
