Folders are actually easy.

                <LocaleNeeded>false</LocaleNeeded>
                <Source>_ExtraFiles\Monitoring</Source>
                <Destination>\</Destination>
</File>

This takes the contents of "_ExtraFiles\Monitoring" including all subfolders 
and copies it to the root of the boot image.

Looks like the OSDInjection.xml file is still relevant in 2012. I had heard it 
wasn't.

This will only account for one file though, would take some playing around for 
large directories. Also note this appears to apply to ALL boot images you 
modify.

We use this but as you stated, all updates are manual. I have written scripts 
that use DISM to take care of my updates in a semi-automated fashion.

Anyone ever done this before? I would love to use the ExtraFiles option our MDT 
boot images, but if we can only modify it during creation of the boot image, 
that won't help us for on-going changes.
