Are you able to check the iis logs on the enrollment server? That's usually what I do if I have HTTP 500 errors. It may give you something to work with.

That may lead you in the right direction. When installing the Mac client, when we go to enroll, we are getting the error: Enrollment error 0x8018002a. All components on the enrollment server look fine, and nothing in the logs I've seen indicates any issue. I can browse to the server on Safari as well.
