You will need to put in a ticket to have the MDM Authority reset, and any devices you have enrolled to this point should be retired beforehand and they will have to be re-enrolled after it's set up in the new ConfigMgr site. You'll need a new Apple APNs cert as well.

I thought I remember a Microsoft engineer telling us that would be possible, we'd have to redo any config profile work but it should be doable. We have our QA site updated to 1602, but have some work to do before we get our prod site updated.
