OK. Just wondered if mu itself had a setting for it. Since your reply I
have read up a little on posting styles and figure that I should adopt
inline/bottom replies as my default from now on.

I might do that just as an exercise in elisp, but for those few cases
where top reply is necessary, manually moving the signature is not much
work.
