I got: 

mail-user-agent's value is message-user-agent

Then setting:

(setq mail-user-agent 'mu4e-user-agent)

I now get: 

mail-user-agent's value is mu4e-user-agent
Original value was message-user-agent

But still composition defaults to Fundamental Mode.

I also had "debug-on-error" enabled and no problems.

Watching "*Messages*" I see the following after "mu4e-commpose-new":

(New file)
hilit-chg-set-face-on-change: Text is read-only: "Can't touch this"

Not sure though if this error is related at all, and probably a red-herring.
