You can use a monochrome theme, or you can configure the various
mu4e-*-face values.

I'm not sure if there's a "no-color" option for emacs as a whole;
font-lock doesn't really apply to colors in general (as it seems), just
to syntax-highlighting.

But if someone has a suggestion for turning colors off, I'd be
interested to hear!
